Every year when October comes around, I fall right in line with the expectation of pumpkin everything. Pumpkin candles? Check. Pumpkin decorations? Check. Pumpkin coffee? Check. Pumpkin baked goods? Triple check.
My family has been making this recipe of pumpkin muffins for over a decade and they are filled with fall flavors and the joy that is only found through homestyle baking, even if you use a little bit of boxed mix.
These are so good, my dog knocked over a dozen onto the floor while I was at work and scarfed down every. single. bite. I do not personally recommend that... but ultimately took it as a compliment after I made sure he wasn't going to be sick.
Ingredients:
One Can of Puréed Pumpkin (Not Pumpkin Pie Filling)
One Box of Spice Cake Mix
One Cup Water
1/3 Cup Vegetable Oil
2-3 Eggs
1/2 Cup of Chocolate Chips
1/2 Cup of Walnuts (Or Your Choice of Nut)
Instructions:
Preheat oven to 375º.
Combine ingredients as instructed on Spice Cake Mix box.
Once combined, stir in pumpkin purée until fully incorporated.
Mix in nuts, chocolate chips, or both to your desired taste.
Place in muffin tin, 2/3 full.
Bake at 375º for 10 minutes.
Top with raw sugar and bake for two more minutes for a crisp topping.
